I’m sure you’ve all been told before that breakfast is the most important meal of the day. And it’s true - a nourishing breakfast is essential to provide energy to start your day with. But what should you be eating?
Making vegan breakfasts is SO easy as there are so many delicious, healthy and filling options to choose from. So whether you’re just learning how to make healthy plant-based meals or you’ve been vegan for a while and just need a little inspiration, read on for some tasty ideas!
Starting Your Day
When you wake up, your body is a little dehydrated and so the first thing you should always do is rehydrate with a glass of water. I like to drink 500ml of lemon water for a morning boost of vitamin C, followed by celery juice.
Oatmeal
Oatmeal is so easy to make and you can use whatever toppings you like! I like to make mine with almond milk, but any plant-based milk will work. For toppings, you could try berries, banana, chia seeds, cinnamon, coconut, or maple syrup… the possibilities are endless! And if you know you’re going to be in a rush in the morning, you can prepare the night before by making overnight oats!
Pancakes
Pancakes are another great breakfast to make and it’s so easy to make them plant based! Try a stack of pancakes topped with walnuts, berries and maple syrup… delicious! If you’re not sure how to make vegan pancakes, here’s a recipe for oatmeal pancakes, which you can use to make waffles too!
Yoghurt and granola
There are so many vegan yoghurts available nowadays!

Smoothies
If you’re in a rush, why not whizz up some fruit and veg into a healthy smoothie? Smoothies are a great way to quickly feel full and energized, while giving your body loads of vitamins and nutrients.

Smoothie Bowl
Another way to have your morning smoothie is to make a smoothie bowl. Blending up frozen fruits, particularly frozen banana, will create wonderful ice cream-like consistency, perfect for topping with seeds, berries or granola and eating with a spoon.
Banana Wrap
A breakfast I love to make is a banana wrap! It’s so simple - just grab a wholemeal tortilla wrap, spread with 2 tbsp of almond butter and roll it up around a whole banana. This is a great snack too and will give you 12g of protein!
Scrambled Tofu
Cutting out eggs and bacon doesn’t mean you need to miss out on a filling savoury breakfast! Scrambled tofu is absolutely delicious and so easy to make. Check out my recipe for curried scrambled tofu - you’ll never want to go back to eggs!
Beans
Another favorite of mine is mixed beans! Beans are a great breakfast as they are high in protein and fiber so will keep you full for a long time. I love having beans with mushrooms and peppers on toast.
Toast
And finally, if you're in a rush or don’t feel like cooking much, there’s always toast! My favorite topping for toast is almond butter, banana and chia seeds. A super quick breakfast but completely satisfying!
